Raw Chocolate Goodness

What You Need

  • 2     cups Cashews, soaked 1 hour or more
  • 1/4     cup dates
  • 1/4     cup Maple Syrup ( you may substitute these sweeteners with any other     sweeteners of your choice)
  • 1/4     cup Water
  • 1/4     cup Cacao Butter, melted
  • 1/4     cup Coconut butter, melted
  • 1     tsp Vanilla Extract
  • Pinch     of Salt
  • 1     cup Cocoa or carob Powder
  • 300     g thawed or Fresh Cherries or Tart Cherries

What You Do

  • Blend     everything but the cherries until smooth.
  • After     you have a nice smooth texture blend in cherries.

For The Crust What You Need

  • 1/2     cup Almonds Nuts (or nut of your choice) soaked for 8 hours or more
  • 1/2     cup Shredded Coconut
  • Pinch     of Salt
  • tbsp     Cocoa Powder
  • 2     tbsp Honey
  • 2     tbsp Cacao Nibs
  • 1/2     tsp Vanilla Extract or 1/4 Vanilla Bean

What You Do

  • Process     almonds, shredded coconut, salt, cocoa powder and vanilla extract in a     food processor until fine crumbs.
  • Add     the honey and cacao nibs until the mixture just starts to stick together.
  • Press     into the bottom of a springform pan.
  • Pour     the filling over the crust and chill or freeze until ready to serve.
