What You Need

cups Cashews, soaked 1 hour or more
- 1/4
cup dates
- 1/4
cup Maple Syrup ( you may substitute these sweeteners with any other
sweeteners of your choice)
- 1/4
cup Water
- 1/4
cup Cacao Butter, melted
- 1/4
cup Coconut butter, melted
- 1
tsp Vanilla Extract
- Pinch
of Salt
- 1
cup Cocoa or carob Powder
- 300
g thawed or Fresh Cherries or Tart Cherries
What You Do
- Blend
everything but the cherries until smooth.
- After
you have a nice smooth texture blend in cherries.
For The Crust
What You Need
- 1/2
cup Almonds Nuts (or nut of your choice) soaked for 8 hours or more
- 1/2
cup Shredded Coconut
- Pinch
of Salt
- tbsp
Cocoa Powder
- 2
tbsp Honey
- 2
tbsp Cacao Nibs
- 1/2
tsp Vanilla Extract or 1/4 Vanilla Bean
What You Do
- Process
almonds, shredded coconut, salt, cocoa powder and vanilla extract in a
food processor until fine crumbs.
- Add
the honey and cacao nibs until the mixture just starts to stick together.
- Press
into the bottom of a springform pan.
- Pour
the filling over the crust and chill or freeze until ready to serve.
