Roasted Sweet Potato Salad Sans Mayo!

What You Need

  • 4-6     Large sweet potatoes or yams
  • 3     Tbsp olive oil
  • 3     green onions, chopped
  • 1/4     cup fresh parsley chopped
  • 1/4     cup each dried cranberries and raisins
  • 1/4     cup pine nuts or sunflower seeds
  • Sea     salt and freshly ground pepper


  • 1/4     cup olive oil
  • 2     tbsp apple cider vinegar
  • 1     tbsp Dijon mustard
  • 1     teaspoon of un pasteurized honey
  • 1     tbsp lemon juice
  • salt     and fresh ground pepper
  • 1     tbsp lemon juice

What You Do

  • It  is up to you if you want to peel the potatoes or not, I prefer the skin.     The skin is where the fibers at!
  • Cut  potatoes into cubes, nice bite size pieces
  • Lightly  coat in olive oil and some salt and pepper
  • Line a baking sheet with parchment paper and lay the potatoes out
  • Bake  for 20-25 mins on 400 (bake until tender, but don’t over cook them)
  • Remove  from oven and let them cool
  • Combine  all the dressing ingredients and whisk until everything is blended.
  • Add he potatoes to a large bowl and coat with dressing, toss easily as the     potatoes are delicate!
  • Can keep in the fridge for a few days
