Cauliflower Rice


1 head cauliflower

 4 carrots 

 4 stalks celery 

 1 large onion 

 1 head of garlic 

 2 cups frozen organic green peas 

 Coconut amino acid or tamari or soy sauce

 Maple syrup 

 Chili for heat  ( optional) 


 Chop up and sauté the onion in coconut oil until translucent 

 Add in the a freshly chopped head of garlic and sauté 

 Chop up the carrots and celery into small pieces and add to the onion and garlic

 In a food processor bust up the cauliflower until it is grain like and add to the frying pan

 Allow for the water to evaporate 

 Add the coconut amino acid/ tamari or soy sauce  (use liberally to coat the ingredients) 

 Add a generous drizzle of the maple syrup 

 Lastly add the frozen peas and stir until bright green and thawed 

 I like to top mine with almonds or seeds for some protein. Use this rice as a side dish, or stuff some peppers and bake!

Coconut Sticky Cauliflower rice

1.5 cups coconut milk

2 tablespoons natural nut butter  ( I like almond or peanut ) 

Handful of fresh basil chopped

Handful of fresh cilantro chopped

Juice of one lime

Drizzle of maple syrup

1/2 cup of tamari/ coconut amino or soy sauce

Mix all together and add over the rice.
