Veggie Chili

Ingredents

•         4 large carrots

•          1 large onion, finely chopped

•          2 red bell pepper, seeded and chopped

•         4 stick of celery, chopped

•          1 head of garlic ( roughly chopped) 

•          Chili powder ( not the spicy one it has a smokey flavour) 

•          Ground cumin

•          1/2 tsp oregano

•          Ground coriander

•          1 ounce can crushed tomatoes

•         3 tablespoons tomato paste

•          1 15-ounce can black beans, chick peas, kidney, rinsed and drained

Fresh coriander  

 

Instructions  

Heat olive oil in a large pot

Add onion and garlic until translucent

Add celery and carrots and peppers  

Add the salt and a generous amount of the other herbs

Add the tomato paste and bind the ingredients together

Add the crushed tomatoes

Add more spices you should be able to smell the cumin , be generous

I like to add some maple syrup to help cut the acidity

Add the beans before serving
