Raw Vegan Pad Thai

Ingredients

  • 1/4  c. almond butter or 1/2 c. almonds
  • 1   clove garlic, minced
  • 1  small chili pepper, seeds removed & finely chopped (or 1-2 tsp. dried red chili flakes)
  • 1/3 cup tamari
  • the  juice of 1 lemon or lime
  • 1/4     c. – 3/4 c. water
  • 2 spiralized zucchini
  • 1  red onion, thinly sliced
  • 2 ribs of celery
  • 2 carrots shredded
  • 1  big handful of fresh cilantro (coriander), chopped

What You Do

  • In  a blender, combine almond butter or almonds, garlic, chili pepper, tamari, and lemon juice
  • Add 1/4 c. of water and blitz well.
  •  In  a large bowl, combine the noodles with the dressing.  Add the onion, cilantro, and toss to combine.
