Rasberry Beat Salad


4 beets

 2 pints raspberries  (or 2 Cups) 

 1-cup walnuts 

 The Juice of 2 limes and one pear 

 Freshly chopped mint

 Olive oil ( for drizzle)  

 Pink Himalayan salt to taste


Remove the skin from the beets and cut into bite size cubes 

 Add the olive oil, lime and pear juice and salt (allow to sit in the fridge for 20 mins)

 Add the remainder of the ingredients and serve
